The cancoillotte cheese
Cancoillotte is one of Franche-Comté's oldest specialities. Writings from the 16th century already mention it. It even seems to have been available since Roman times! Formerly known as "la
fromagère", today it is known by a very meaningful nickname: "la colle".
Cancoillotte is a runny cheese ranging from cream to yellow. It is made from skimmed raw milk, curdled, heated to a maximum of 60° and then pressed, crumbled and stirred, known as metton. Once matured, the metton is melted with water, salt and butter.
Cancoillotte can be eaten hot or cold, plain, with butter, garlic or yellow wine, for dinner or breakfast!
