Griottines of Fougerolles
Fougerolles is a famous and not-to-be-missed spot in Haute-Saône, because it holds an AOC-labelled secret: kirsch and Griottine.
Griottine is a cherry that has been macerated in several liqueurs.
The cherry used to make Griottine is the oblachinska, which grows and is harvested only in the Balkans!
There are several stages in making Griottine: after being picked by hand, the cherries are macerated the same day in a preserving liqueur. They then go through a series of liqueur baths at
. The final Griottine liqueur is 15°.
Kirsch is a cherry liqueur. The cherries used are called "guignes" and come from the orchards of Fougerolles. Some 40,000 cherry trees provide the fruit for making Kirsch, jams, syrups and other food preparations.
